My Mother-in-law makes these and sends them to us every year at Christmas. Her Mother used to make them, and started putting the icing between the meringues.
These meringues could also be a tasty treat at a baby shower with blue and pink icing between them.
2 egg whites
1/8 tsp. salt
½ cup granulated sugar
½ tsp. vanilla
Beat egg whites with salt until stiff and dry. Gradually add the sugar, beating constantly until the mixture is very stiff and holds its shape. Add the vanilla and stir.
Using two spoons, shape the meringue into very small mounds on a non-stick cookie sheet.
Bake in a very slow oven at 250F for about 50 minutes. Let the meringues cool for about 15 minutes. Using a plastic spatula, carefully loosen the warm meringues from the cookie sheet.
Make a butter icing. Divide the icing into two equal parts. Colour one half red and the other half green. Stick two meringues together with icing in the middle.
Note: when the meringues are cooked they will be crispy.
When you stick them together with icing they will absorb some of the moisture from the icing and become a little bit soggy. Let them sit on a plate for a day and they will once again become nice and crispy.
