It’s almost Canada Day, so in celebration here’s a red and white roasted potato recipe!
These baby potatoes don’t take long to prepare or cook so they can easily become a family favorite. You can also freestyle the recipe and add paprika, garlic powder, or your other favorites
- Two to three cups of baby potatoes (I used a mix of red and white)
- Three tablespoons of olive oil
- One teaspoon Italian spice mix
- One teaspoon coarse salt
- Coarsely ground pepper
Heat oven to 350 degrees f.
Trim any spots off potatoes and wash. Prick each potato with a fork. Microwave for about 16 minutes. Pour oil on a foil-lined baking pan and add microwaved potatoes. Toss in the oil and season with the spices, salt and pepper. Bake in oven for about 15 more minutes, turning potatoes over once or twice. Remove from oven when potatoes are soft in middle and golden and partly crispy on the outside.
