My husband loves to make this cold tomato soup several times over the summer. He doesn’t like to spend a lot of time cooking, so it does qualify as a “cook me quick” recipe. Make sure you go for tomatoes that are naturally ripened (not picked green and gassed).
2 cups of seeded and chopped tomatoes put through blender
1 seeded and chopped tomato that is not blended (to give texture)
½ chopped green pepper
½ cup cucumber chopped
1 tbsp. finely minced onion
1 tbsp. fresh basil, minced
1 clove minced garlic
2 tsp. red wine vinegar
1 tbsp. lime juice
1 tsp. liquid honey
Mix all ingredients together and serve with a few croutons placed on top.
