This is a recipe for one serving. Quick, easy and way better than eating toast over the sink after a hard day of work.
One cup fresh pasta eg. fettuccini or linguini, cooked as per package directions
- Six or seven medium sized frozen cooked shrimp, defrosted
- Six or eight plum tomatoes
- Two tbsp. chopped cilantro
- One tbsp. virgin olive oil
- Half tsp. or more lemon Mrs. Dash seasoning
Prepare pasta according to package instructions, drain and cover to keep warm. With fresh pasta and pre-boiled water, this process usually takes 6 minutes. In a small frying pan, heat oil and add shrimp. Sprinkle the shrimp with the lemon Mrs. Dash and add plum tomatoes. Heat this for about three minutes over medium heat. Add chopped cilantro and remove from heat. Plate pasta and then spread the shrimp/tomato mixture on top. An option is also to squeeze a lemon wedge over the shrimp so that the lemon flavor really kicks.
Enjoy with a citrusy white wine and voila…a special dinner for one. Double, triple or quadruple the recipe to serve more friends!
