Let me introduce you to a salad dressing which tastes absolutely amazing when served over fresh spinach leaves, fresh sliced strawberries and fresh blueberries. When blueberries aren’t in season, you can use kiwi fruit. Every time I make this, and serve it as suggested above, the recipe gets requested.
- 1/3 cup melted honey
- 1/4 cup orange juice
- 1 tsp. salt
- 2 tbsp. white sugar
- 1 tbsp. prepared yellow mustard, like French’s
- 1 tbsp. finely chopped green onion
- 2 tbsp. poppy seeds
- 1/4 cup light oil ( light olive oil or canola)
Mix in a jar and chill for about 1 hour before serving. Give the jar a good shake before pouring some over the salad. You won’t use all this dressing in one shot so can keep some on hand for a dinner salad later in the week.
I use a Mason jar to make the dressing because I can trust it not to explode when I heat up the honey in the microwave to melt it. Someone seems to put things in the microwave for too long – which is ironic when I am trying to do things quickly (sigh).
Tip: Spinach holds a lot of water when washed so make sure you dry it thoroughly so that the dressing will stick.
