When you want to whip something together that says “I spent all day in the kitchen”…but you don’t actually want to spend all day in the kitchen, try this appetizer.
Makes 8 to 10 servings
Prep time 5 minutes & cook time of 15 minutes (or until golden)
This wonderful light puff pastry is filled with melted brie cheese. Serve with crackers on the side. I usually make one that is apricot jam mixed with ginger powder, and one that is raspberry.
One 17.5 oz. package of frozen puff pastry
8 oz. wheel of Brie cheese
2 tbsp. of your favorite thick jam eg. I use raspberry or apricot
1/8 tsp. cayenne pepper
¼ tsp. ginger
1 well beaten egg white
Take a square of thawed puff pastry and roll out between floured sheets of waxed paper so that it will completely cover the top of the cheese wheel when it is brought up along the sides.
Cut the wheel of cheese in half (like a hamburger bun). Mix your jam and spices together and then spread in the middle of the cheese. Put the cheese and jam onto the center of the rolled out pastry and carefully pull up the sides so that there are no holes that the melted cheese can get through. To make the dough seal you may have to moisten the pieces at the top with water and then smooth them together.
Put a sheet of foil on a cookie sheet and spray lightly with a cooking spray. Place the dough covered cheese on the foil and brush the whole top of the cheese with the beaten egg white.
Bake for 15 to 20 minutes and then let cool for about five minutes before serving.
