My Mom made these on many weekends, and gave them to my sisters to share on ski trips. Some of my sister’s friends still make them for their own kids!
1 cup raisins
1½ cups water
½ cup butter
2/3 cup brown sugar lightly packed
1 beaten egg
2 ½ cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
Boil 1 cup of raisins in 1 ½ cups of water for 1 minute and let cool. Don’t discard the raisin water.
Cream the ½ cup of butter with the 2/3 cup of brown sugar.
Add one well beaten egg and the raisins, including the water in which they were boiled.
Sift 2 ½ cups flour; 1 tsp. baking powder, and 1 tsp. baking soda. Add to the first mixture and beat well. Add 1 tsp. vanilla.
Put in muffin tins or baking cups and bake in oven at 350 degrees until done. Mom didn’t say when they’d be done…just they’re done when they’re done. (check after 15 minutes and continue cooking until golden brown)
