These crisp meringues hold a special surprise in their cloak of yumminess…chocolate chips!
If you like chocolate and meringues…well surprise, today is your lucky day…
3 egg whites
1 cup sugar
1 cup semi sweet chocolate chips
2 tbsp. unsweetened cocoa
1 tsp. vanilla
Preheat oven to 275 degrees and line baking sheets with foil.
In a large bowl, beat egg whites with salt until just stiff, then gradually beat in sugar until stiff peaks are formed.
Fold the chocolate chips, cocoa powder and vanilla into beaten egg whites.
Drop batter by walnut-size spoonful’s onto prepared ungreased baking sheets.
Bake for 30 minutes, but check by lifting up one after about 20 minutes to make sure the bottoms aren’t burning.
Transfer entire foil sheets onto racks and allow to cool – or the pan will keep cooking the bottoms.
Store in an airtight container
Makes about 4 dozen meringues.
