This recipe makes between 4 and 6 servings. In a family of lots of hungry guys, doubling this makes sense.
This meatloaf is extremely juicy and the potential variety of different flavours is as big as your imagination e.g. a Swiss cheese and mushroom topping.
- 2 lbs. ground beef
- 3/4 cup soft, fresh bread crumbs
- 1/2 cup minced onion
- 2 eggs, beaten
- 1 1/2 tsp. salt
- 1 1/2 tsp. ground black pepper
- 3 cups shredded cheddar cheese
Preheat your oven to 350 degrees F.
In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper and mix well. Pat out meat mixture into a 14″ x 18″ rectangle on a piece of waxed paper. Spread the cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion, to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10″ x 15″ baking dish. Bake at 350 degrees for 1 hour.
