I love an easy dessert for Sunday night dinner – especially one with seasonal fruits like apples. When we moved into our house almost 20 years ago, we planted tiny little excuses for apple trees along the back of our yard. These days, a ladder is needed to collect the bounty of organic apples in time for making apple crisps and this super easy dessert.
Please find or borrow a springform pan for best results in making this dessert. Oh, and thank you to my darling friend Janie for the birthday gift of the cake serving plate pictured here.
1/2 cup brown sugar
2 sliced diced raisin bread
1/8 cup large flake oatmeal
1 tbsp. cinnamon
1 tsp. cardamom
4 medium sized apples, peeled, cored and diced
Approximately 1/2 cup melted butter – OR – Pam Canola oil cooking spray
2 teaspoons Demerara sugar (for decorating the top)
1 tbsp. powdered icing sugar (optional) for decorating the top
1 box phyllo pastry
Pre-heat oven to 350 degrees. Grease the bottom and sides of a springform pan with butter or Pam cooking spray.
Unroll the sheets of phyllo from the box and keep from drying out by placing under a damp but not wet clean tea-towel.
Dice apples and put in a medium sized bowl. Add the sugar, cinnamon and cardamom. Stir together and set aside. Dice raisin bread and add to apple mixture. Stir in oats. Set this mixture aside.
Layer four to five buttered or lightly sprayed phyllo pastry sheets so that they not only cover the bottom of the springform pan, but hang over the edges.
Spread about 1/3 of the apple mixture in the bottom of the pan. Cover with three or more sheets of buttered/sprayed phyllo sheets. Repeat with apple topping, followed by another layer of 3 to 4 sheets of buttered/sprayed phyllo. After the final layer of apple, bring the phyllo that is hanging over the sides up and loosely pile on the top. Give the top a little brushing of butter or spray of Pam. Then, sprinkle the Demerara sugar over the top and pop in the pre-heated oven. Bake for 30 minutes.
This cake is best when warm out of the oven with a dollop of 0% vanilla Greek yoghurt, whipped cream or vanilla ice cream.
