Fish is not a frequent item in our family’s rotation, so introducing a new fish to our table is sometimes met with trepidation. One way to get greater acceptance is to take what is already liked and match it with the new item. So thus crispy tilapia was born.
We really like Terra Chips which are gluten free and come in a “Zesty Tomato” flavour. Crushing them up makes a wonderfully colourful crust that has a subtle flavour.
Here’s the recipe for 7-8 fillets.
- 7-8 tilapia filets
- 2 eggs, beaten
- 1 bag (170 grams) of Zesty Tomato Terra Brand chips
Preheat oven to 350 degrees. Take a baking pan, line with foil and spray with cooking spray.
Crush entire bag of chips into small flakes.
Dip each fillet in the beaten egg and dip into a separate dish of crushed Terra chips. Coat both sides of fish and transfer to the baking pan. Finish coating all filets and bake for about 20 minutes or until fish is cooked throughout and opaque.
Serving suggestion, serve this fish with Uncle Ben’s flavoured rice and a Caesar salad.
