Now that I’m getting back to “normal” after an intense couple of months at work, here’s a recipe that all chocolate lovers will enjoy! I’m going to bake a few batches of cookies this weekend (I hope!) so will post some photos later. Keep these cookies in a well sealed container for longer freshness.
- 1 cup butter
- 2 eggs
- 1.5 cups white sugar
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tbsp. corn syrup
- 1/2 cup cocoa powder
- 2 cups flour
- 1 cup dark chocolate chips (I like Hershey’s Chipits, but choose your own adventure)
Cream the butter and eggs together with beaters until light and fluffy. Add the vanilla. In another bowl, mix the dry ingredients together except for the chocolate chips. Add the dry ingredients to the wet ingredients and stir until combined. Stir in chocolate chips. Form into walnut sized balls.
Bake on foil-lined sheets or parchment paper at 350 degrees or until cracks appear on the tops of the cookies. (approximately 7 minutes). Enjoy!
