It was a hectic day yesterday so I pulled together one of my super quick dinners so that we could keep on setting up the Christmas tree, cleaning and getting a few other chores done. To the rescue was a recipe involving just a couple of ingredients…including good old potato chips (or crisps if you’re from the UK)
Ingredients: (to serve six)
- 6 boneless, skinless chicken breasts
- 2 cups crushed plain potato chips
- 2 cups cheddar cheese
- 1 tsp. black pepper
- 1.5 tbs. melted butter
Preheat oven to 350 degrees. Place chicken breasts in a foil-lined pan. Crush potato chips into little pieces. Grate cheddar cheese and add to the potato chip mixture. Stir in the pepper and melted butter. Press the mixture onto the top of each chicken breast. Bake for 35-45 minutes depending on the thickness of your chicken.
We served our chicken last night with some tri-colour pasta into which we stirred about three tablespoons of pesto I’d made and frozen in baggies for such an occasion. We threw some cherry tomatoes on top of the pasta for colour and something fresh,
