Happy New Year! To kick of 2014, I thought I would spring a new recipe on my family which is based on a Chef Michael Smith “Chef at Home” episode I saw on the Food Network over the holidays.
Enter, Apple and Fennel Salad. I knew that there would be resistance from the crew seeing as fennel has never landed on our doorstep…but a new year is a time for new adventures and so we bravely stepped forward with this trial. In the photo above you can see for our New Years Day dinner we had garlic and cheese whipped potatoes, prime rib and some steamed green beans. I made all the boys including my nephew wear the girlie tiaras too but they wouldn’t let me take pictures. Anyhow, back to the recipe…
- One large fennel cut into quarter-sized chunks
- 2 Granny Smith apples, diced
- 2 MacIntosh apples, diced
- 1 tsp. cinnamon
- 3/4 cup fruit juice such as apple, apricot or mango
- 1 or 2 tbsp. brown sugar
Peel, core and dice the MacIntosh apples and place in a saucepan with the fruit juice, cinnamon and brown sugar. Cook until you can mash the apples with a potato masher or a fork. Set aside.
Wash the fennel and remove the hard core at the bottom. Chop into quarter-sized pieces and toss with the diced Granny Smith apples. Stir together with the warm apple sauce and serve.
