My daughter needed a little cheering up so as a surprise I revisited an old recipe I made when the kids were small, caramel corn!
This recipe makes a really big batch which filled one large and one medium roasting pan so if you’re looking for a small amount, cut the recipe in half. This would be something fun to make for your next at-home movie night too!
- 1 cup un-popped popcorn
- 2 cups brown sugar
- 1 cup melted butter
- 1/2 cup dark corn syrup
- 1 cup nuts (optional)
Preheat oven to 250 degrees. Pop all the popcorn and set aside in a large enough roast pan that you can stir the popcorn later without it falling out. I use my turkey roasting pan which has 5″ high sides, and another similar pan which is a little smaller…but I made this big batch recipe.
In a medium saucepan, mix the brown sugar, butter and corn syrup. Bring to a boil and boil for 5 minutes. Pour the sugar mixture over the popcorn in small amounts so that you can mix it thoroughly without having one giant caramel blob…as delicious as that may be. If you wish to add nuts, stir them in now. Put the mixture in the oven and bake for one hour, stirring every 20 minutes.
After baking, turn the caramel corn out immediately onto a foil or parchment covered surface because if you don’t it will cool and stick to the pan more. After the popcorn has cooled, place it in your mouth…I mean place it in some tightly covered containers away from heat.
