Like Harry Houdini, this cake is very good at disappearing 🙂 Think of this recipe also as a base that you can add flavour variations to. For example, instead of chopped nuts, you could add 1/2 to 3/4 cups of fresh blueberries and a tablespoon of grated lemon rind. Or you could add some chopped dried cranberries and grated orange rind….choose your own adventure or go by the standard recipe below. Enjoy!
1 cup sour cream
1 tsp. baking soda
1/2 cup soft butter
1 cup white sugar
2 eggs, well beaten
1 tsp. vanilla
1 3/4 cups flour
2 tsp. baking powder
1/4 to 1/2 cup brown sugar (based on your preference)
3 tbsp. cinnamon (we are cinnamon monsters in my house so dial it down if you like less)
2 tbsp. chopped nuts (optional)
Preheat oven to 350 degrees F. Grease and flour an 8″ cake pan.
Mix the topping ingredients together in a small bowl and set aside. Combine sour cream and soda in a large bowl (it will double in size). In a mixing bowl, blend butter and sugar thoroughly. Add the eggs and vanilla and beat well. Sift the baking powder and flour together. Alternately add the sifted dry ingredients and sour cream. Spread half of the batter in the prepared pan.
Sprinkle the batter with half of the topping mix. Cover this with the remaining batter. Sprinkle the remainder of the topping evenly over the top. Bake for about 45 minutes, cool slightly (to avoid sugar lip burns) and enjoy!
