We’ve gone for Mother’s Day brunch at the Delta many times over the years. My husband loves their bread pudding and was overjoyed when my Mom found the recipe printed in the newspaper. Hope you like it too!
Ingredients:
- 1 cup milk
- 1 cup whipping cream
- 3 eggs
- 1 cup granulated sugar
- 1 tsp. vanilla extract
- 1 loaf of French bread
- Sifted icing sugar
- Caramel sauce
- Fresh berries for garnish
Preparation:
Combine milk, cream, eggs, sugar and vanilla. Whisk well. Cut the bread into ¼ inch slices. Dice them and let soak in the egg mixture for 15 minutes.
Butter the insides of 6 moulds and fill with the bread mixture, mounding on top. Set in a shallow pan and pour in hot water to cover the bottom half of the moulds. Bake in a 325F oven for 25 minutes or until golden on the top and firm. Let cool in the water bath. To serve, run the tip of a knife around the mould and gently remove to serving plate. Dust with icing sugar and serve on a large plate with caramel sauce, fresh berries…and if it’s Christmas, add a couple of mint sprigs. Yum!
